Zoetic Sushi

Chef Chuck Cobb has taken the traditional art of Edomae Sushi and brought it to downtown Sanford, not only elevating the already growing scene in the area, but also adding another Omakase spot to Central Florida.

What is really unique about this private chef’s tasting is that it is located in the ZL Home’s modern high end showroom right in the heart of historic Downtown Sanford.

This Japanese style dates back over 200 years. The Edo Sushi Style grew up on the streets of Tokyo as a necessity. Since the sushi was prepared and sold on the streets at a time long before refrigeration, Street food vendors cured the fish with salt, vinegar and soy sauce.

Chef Cobb hand picks the freshest fish imported weekly from Tokyo Japan, and fresh fish suppliers locally. After thoroughly inspecting the fish he begins the process of aging the fish to bring out the umami of the fish.

Varieties of fish like Spanish Mackerel, Golden Eye Snapper, Sweet Bafun Uni from Hokkaido, Cold Water Scallops, Hairy Crab, Spiked Crab and Cuttlefish are used in the Omakase Presentation.

Chef Cobb also uses the finest ingredients he can find to round out the presentation with items like Tamaki Gold rice, and Akazu Vinegar, which is vinegar made from the run off of Sake-Lee and then fermented and aged.

Kegani or hairy crab and Heikeigani a spiked crab.

Hijiki Seaweed Salad made with Hijiki seaweed with lotus root, ginger sesame oil, red and green peppers. You will never want any other seaweed salad after this.

A tasty one bite serving of Hokkaido scallop with uni and ikura(salmon roe).

This presentation of miniature sardines, hairy crab, quail eggs, and gold flakes was pretty unique, even if you are not a fan of some of these ingredients, when mixed together it was spectacular.

Shin-Ika (Cuttlefish)

Suzuki (Japanese Seabass)

Sliced Giant Pacific Octopus with micro greens in a sake based citrus tea.

Hamachi (Japanese Amberjack)

A cut of Bluefin Akami Tuna and a cut of Chutoro Medium Fatty Tuna.

To end our evening, Chef Cobb put together a fabulous dessert made with shaved ice, coconut ginger and turmeric yogurt with fresh dragon fruit and mint.

We were really impressed with Zoetic Sushi and Chef Cobb, everything was fresh, fragrant and a real delight to the palate, and of course we were thoroughly entertained. The setting inside of of the ZL Homes building also makes this Omakase experience feel very unique.
