Lake Nona’s premier waterfront restaurant with chef driven, New American fare, has just launched a new menu featuring 22 additions. The changes are designed to showcase the best in fresh and upscale cuisine with an approachable feel.

Led by Executive Chef Bryan Thoman, the Canvas restaurant menu features new American cuisine that is influenced by Florida’s Southern and Latin American roots with a focus on seasonal and regional produce as well as an abundance of fresh, Florida seafood. The chef driven menu is filled with shareable appetizers, creative salads and sandwiches, hearty entrees, and wood grilled pizzas and flatbreads.


Chef Bryan Thoman’s brand new dish selection reflects an array of reinvigorated plates which cater to the diverse palate of each guest. Items like Habanero Glazed Chicken Wings, Black & Blue Burger, Seared Scottish Salmon Fillet, and others are perfect entrees for summer.

Many of the dish ingredients present a library of herbs, tomatoes, and peppers grown in the restaurant’s outdoor garden, highlighted in plates like the Heirloom Tomato Panzanella Salad and Vegetarian Bianco Flatbread.

Every detail of Canvas has been thoughtfully designed and planned to create a welcoming space for guests. The restaurant’s exhibition style kitchen opens to the main dining room while floor-to-ceiling windows provide picturesque waterfront views.


The Summer Vacation cocktail at canvas, truly tastes like one. This is made with passion fruit, lemon, pineapple, Solerno blood orange liqueur and my all time favorite rum, Flor de Cana.

This Strawberry Rhubarb Mule is certainly not your average mule. The drink contains mint, housemade strawberry-rhubarb jam, Fever Tree ginger beer & Reyka vodka. Reyka Vodka is the only vodka in the world made with a Carter-Head still, and the only vodka served in a tiny one… really love the mini still for a mule mug.

Jumbo Lump Crab Cake features arugula, pickled fennel, and jazzy Louisiana remoulade for a nice flavor with a little bite on the end.

Slow Roasted Pork Belly at Canvas is always a great choice. Made with soy-key lime marinade, charred celery, pickled fennel, mint and a mango jalapeno sauce, this pork belly is filled with great flavors.

Octopus is not for everybody, but if it’s cooked right, you might become a fan, and this Sherry Braised Octopus is a great way to challenge your taste buds. Cooked in a Cast iron skillet with chorizo, crispy fingerling potatoes, wilted arugula and caper vinaigrette, this was some of the best octopus I've had.

The Heirloom Tomato Panzanella is a great new addition for summertime. This salad contains Bermuda onions, basil, mint, garlic roasted ciabatta, arugula and a red wine vinaigrette.

Don't take your chances burning good meat on your grill… head over to Canvas and order this Grilled Prime New York Strip Steak with goat cheese potato au gratin, wilted baby spinach and some wonderful garlic butter, you won't regret it.

When you have your own garden and are as creative as Chef Thoman, you don't make a boring old cheesecake, you make a Pistachio, Strawberry and Rhubarb Cheesecake with goat cheese, and a salted caramel brittle. It was ridiculously good too.

The market part of Canvas is open daily for breakfast and lunch. Guests can stop in and have a meal at the market’s communal table or chose from a variety of grab and go options, gourmet coffee, and fresh-squeezed juice and smoothies. The market also has comfortable seating and nooks where patrons can enjoy food and complimentary WiFi.

The 278 seat Restaurant part of Canvas is open Monday through Thursday from 5:00 pm to 10:00 pm, Friday and Saturday from 5:00 pm to 11:00 pm and Sunday from 5:00 pm to 9:00 pm.

The Bar Opens daily at 3:00 pm, and the market is open from 9:00 am to 7:00 pm.

Loews Sapphire Falls Resort at Universal Orlando has unveiled a new weekly themed dinner show, Caribbean Carnaval, featuring an all you can eat buffet and high energy live entertainment for the entire family. 

From the moment guests arrive at the festive outdoor pavilion, they are greeted by the sights and sounds of a party in paradise. Accompanied by stilt walkers and acrobatic dancers, the evening’s lively hosts whisk the audience away on a flavorful, musical tour through the Caribbean with plenty of dancing, singing, limbo and even a conga line.

Caribbean Carnaval is one of the latest additions to Universal Orlando Resort’s unprecedented growth. In just seven years, more than 25 new experiences with entire themed areas, powerful attractions, incredible dining opportunities and dramatically themed on site hotels have been added across the destination.

“The addition of Caribbean Carnaval takes our guest experience to a new level,” says Barb Bowden, complex managing director for Loews Sapphire Falls Resort and Loews Royal Pacific Resort. “Our team set out to create an evening filled with food, fun and celebration. Guests can savor an amazing array of Caribbean-inspired food and drink one minute, then be on their feet doing the limbo next.”

The food served here strives to be as authentic as possible with dishes and drinks straight out of the Caribbean. Planter’s Punch, mojo roasted suckling pig, ropa vieja, jerk chicken, grilled snapper, Caribbean rum cake and guava flan are some of the great food selections.

A colorful cast of characters provides exciting live entertainment as they take guests on a musical voyage from Florida through the Bahamas with stops in Cuba, Jamaica, Barbados and Trinidad.


A musical journey through the islands with live music will get you grooving.

This is the Signature Calypso Punch Rum Cocktail that every guest gets upon arrival to the dinner show.

The Mojo Roasted Suckling Pig was quite a sight to behold, and it was very delicious.

You can't go wrong with a little bit of everything from the delicious Caribbean inspired buffet. Ropa Vieja with plantains, grilled snapper, suckling pig with an incredible chimichurri sauce, jerk chicken with sweet potatoes.


The dessert bar did not disappoint! Guava flan, Mexican chocolate fudge cake, coconut & caramel rice pudding & Caribbean Rum cake.


Caribbean Carnaval takes place every Wednesday night in the resort’s outdoor pavilion, Cayman Court. Seating begins at 6 pm and the show starts at 7 pm.

Tickets are $69 for adults and $35 for children ages 3-9. Children under 3 are complementary. Price includes gratuity, non-alcoholic beverages, wine, beer and Planter’s Punch. Tax and ticketing fees apply.

Recently, Chef Tim Keating has taken over as the director of culinary operations for Boulevard Restaurants. 

Boulevard Restaurants currently consists of Urbain 40 and Paradiso 37 in Disney Springs. From the moment of his arrival, Chef Tim has been busy playing around with the menu to put his own personal spin on the fare served at Urbain 40.


The Four time James Beard award nominee is highly passionate about using the freshest seasonal produce, sustainable meats and seafood, most of which are locally sourced. Chef Tim’s new menu is quite impressive with 23 new dish additions and changes, crafting them into seasonal favorites like the Duck Confit Troffie Di Abruzzo Pasta, Char-Crusted Angus Striploin and Rock Shrimp & Cape Bay Scallop Ceviche “Cocktail.”

Urbain 40 has become a well known hot spot in the Dr. Phillips area known as Restaurant Row. The American Brasserie and Lounge that opened towards the end of 2015 made a name for itself by serving chef crafted cuisine inspired by American and continental classics set in a 1940’s style neighborhood eatery with imaginative offerings for lunch, dinner, and late night with a plethora of “Big City” cocktails.

Inside Urbain 40 you will find a simple and elegant atmosphere, reminiscent of the big band era. You can enjoy live music, which plays nightly selections from a host of genres ranging from Sinatra, Duke Ellington and Louis Armstrong. The Decor is classic brasserie with white linen table cloths, plenty of wood and shiny brass.

Rock Shrimp & Cape Bay Scallop Ceviche "Cocktail" is one of the appetizer selections from the newly revamped menu. This dish features fresh and local rock shrimp and Cape Bay scallops in a mixture of radishes, cucumbers, palm hearts, peppadew peppers with citrus & tequila accentuations. This is a very creative ceviche.

The Elderflower Martini is a vibrant floral martini with hints of honey, white grape, and lime. This was a great “Big City” style cocktail.

Crispy Jonah Crab Cake is served atop a savory slaw, sauce verde and a piquant mango pepper coulis that made the flavors of the crab cake really come to life.

The Lemon Myrtle Dusted Gulf Swordfish & Slow Braised Heritage Cheshire Pork Belly is served with a Zellwood corn pudding, varietal mushrooms, white asparagus, & young turnips. It's in a dish like this, with so much flavor and a variety of ingredients, you truly see the brilliance of Chef Tim Keating.

Steak Frites is a traditional French bistro favorite, and the Char Crusted Angus NY Striploin is Chef Tim’s spin on the dish. The steak is coated in a mixture of dry rub seasonings that allow it to cook and crust up on the outside, while still allowing for a good medium and juicy steak inside. The frites are made of truffled pomme frites, and this is served with a sauce foyot, which is a variation of the classic Bearnaise sauce.

Troffie Di Abruzzo is a twisted Ligurian style pasta dumpling with duck confit & duck sausage, wilted rhapini & alba mushrooms. This entree was very flavorful, but also very rich and decadent in the French tradition.

After all the rich foods, the Lemon Meringue Tart was a great palate cleanser with Blueberry lavender sorbet, poppy seed crèma and Florida blueberries.

The Tropical Sundae Deluxe is a dessert that really infuses the concept of Continental American cuisine with toasted coconut gelato, rum soaked angel food cake, caramel sauce & pink peppercorn spiced pineapple.

If you love chocolate and peanut butter, then you will enjoy the Sinful Chocolate & Peanut Butter Creation with layers of dark & milk chocolate, peanut butter crèma, and Florida blueberries.


Urbain 40 has always been a great restaurant, but with Chef Tim Keating presiding over the food, it just got way better. Now that he has this menu in place at Urbain 40, he's free to start focusing more on Paradiso 37, and that is exactly what he has planned...so stay tuned for updates on that.

Whether you are single, or are dining with a significant other, you are sure to have a great experience. Groups and larger parties are also very well taken care of as the restaurant has separate spaces that allow for privacy, but you can even leave the doors open to let the music of the big band era flow into your private event.

Urbain 40 is open for lunch from 11:00am until 2:00pm daily, with dinner service going from 5:00pm until 10:00pm on Sunday to Thursday, and on Friday and Saturday they are open until 11:000pm.

The Pharmacy is a throwback to a 1920’s era speakeasy. A place where alcohol could be "safely" purchased during the era of prohibition in the USA. 

Often times, speakeasy's pretended to be an apothecary on the outside, with a secret entrance where patrons could purchase alcoholic beverages in a low key setting. An apothecary was a legal place to sell and prepare medicines and drugs to remedy what ever was ailing you.

At the Pharmacy they have the whole concept down pretty good, as they have a remedy for whatever ails you, with good food, good drinks and even a secret entrance behind elevator doors that open up to a seemingly secret location in the Dr. Phillips area of Restaurant Row.

The pharmaceutical portion of Pharmacy is made with the finest ingredients to provide you with an antidote from all your troubles. Every tincture you find in the fully stocked medicine cabinet has been properly handcrafted and custom blended by expert Apothecaries. Using only the freshest greens for bitters, tonics and sodas to make the best tasting medicine you’ve ever had.

As the Pharmacy would say, “Our medicinals are not to be taken on an empty stomach”, so the food specialists put on the Ritz for you in the kitchen. Everything is made from local, organic, and sustainable foods so you know it’s the bee’s knees. The selection changes based on the “chef’s diagnosis”, but you always come out feeling just swell.

Loren Falsone and Tyler Brassil are in charge of the kitchen and work tirelessly to bring food that is unique and tasty to Pharmacy with a focus on quality and local sourcing. 


Dominick Tardugnoour is the head ‘pharmacist’, who tinkers with his beakers and herbs to create the perfect concoction. The combination of talents at Pharmacy in the kitchen and bar combine to make this the perfect place to get your prescription for whatever issues you may have and leave you feeling on top of the world.

The beaker of Gremolata Hand Cut French Fries is a very popular item at Pharmacy and is served with house made spicy mayo & ketchup.

The Tomato & Prosciutto Bruschetta is topped with Burrata cheese and a farm poached egg.

The “Buttery, Garlicky Cape Canaveral Rock Shrimp” are very tender and come right out of the shell. I love rock shrimp, as I call them the steak of shrimp.

Florida Fresh Tang Fried Chicken with Lime, Scallions & Sesame.

Margherita flatbread with Sciue-Sciue Tomato, Green H2Ouse and Purple Micro Basil.

The Bone Marrow and Oxtail with Fig Marmalade is a must have dish at Pharmacy Orlando. Very rich and full of flavor, this is an impressive entree.

Although fondue may not be considered some type of new gastronomical experience in 2017, the Classic Cheese Fondue at Pharmacy Orlando is pretty spectacular when you consider that it is made with a 100 Year Old Sourdough Crostini and served with spicy pickled green beans.

Taleggio Fritters are made with semisoft, washed-rind, smear-ripened Italian Taleggio cheese that is lightly battered and deep fried.


For a more simple dessert, the Caramelized Banana Split really hits the spot. This is made with double java ice cream, caramelized banana, hot fudge, coconut crumble & fresh whipped cream.


The Hot Maple Pecan Sticky Bun with Southern Butter Pecan Ice Cream is a twist on two southern classics that you can't go wrong with.

If you want something more contemporary, try the Berry & Cherry XO with Pavlova & Dark Chocolate Pot De Creme Yum. Its super fancy, and super tasty.

For a dessert that hits on all of your tastebuds, the Lemon Tart with rum dulce de leche, macadamia, mascarpone whipped cream & almond brittle provides sweet, tart, crunchy, and smooth all at once.

The Pharmacy, while it has grown in popularity is a not so secret, secret anymore, but it is still an experience to check out. It is sure to be a fun time for guests and a memorable experience. Loren and Tyler hit on all sixes to provide you with quality dishes to compliment your ailments, and the drink selection from Dominick Tardugnoour is sure to be stiff and will fix any ailments you may have.

Pharmacy Orlando is open from Tuesday to Thursday from 5:00 pm to 10:00 pm, while Friday and Saturday they are open until midnight. They are closed on Sunday and Monday.
