Tickets are now on sale for Cocoa Beach Uncorked, an all new food, wine and craft beer festival launching from the sunny shores of Florida’s Space Coast.

The highly anticipated two day festival will take place June 3-4 on the beach at Alan Shepard Park in Cocoa Beach, a favorite gathering spot for viewing space launches and surfing icons.

More gastronomical than astronomical, Uncorked Cocoa Beach will celebrate Central Florida’s most renowned chefs, restaurants, and breweries in a culinary showcase served with 180-degree Atlantic Ocean views. The event is the east coast sister of the popular Clearwater Beach Uncorked, now in its sixth year and well established as one of the best food, wine and beer festivals on Florida’s west coast.


“Cocoa Beach is the perfect location to launch our new taste fest and showcase the finest food, wine, craft brews and other fabulous culinary treasures of Florida’s east coast,” said Tammy Gail, event producer. “We’re bringing together people with a shared interest for what will be an unforgettable weekend for attendees, partners and exhibitors alike. I fully expect Uncorked Cocoa Beach to be a sellout.”


Celebrating its first year in Florida’s Space Coast, Cocoa Beach Uncorked will play host to foodies, wine lovers and craft beer aficionados who long to wiggle their toes in the sand as they enjoy some of the area’s most delectable offerings.

A 20,000 square foot Grand Tasting Tent will feature a vast array of mouthwatering taste experiences for discerning palettes. A percentage of event revenue will benefit Florida Restaurant & Lodging Association and the Brevard County Humane Society. 


In addition to the Grand Tasting Village, the two-day event will feature a variety of VIP and interactive experiences, tastings, cooking demonstrations, and competitions between some of the area’s most notable and award winning chefs and restaurants.


Uncorked Cocoa Beach is backed by a distinguished roster of presenting sponsors and partners, including Florida’s Space Coast Office of Tourism, City of Cocoa Beach, Publix, Hilton Cocoa Beach Oceanfront, Fishlips Waterfront Bar & Grill, Florida Restaurant & Lodging Association, Victory Casino Cruises, Cocoa Beach Hotel & Lodging Association, Lowe’s and the Cocoa Beach Regional Chamber of Commerce.

Tickets are $55 per person, per day for general admission and $75 per person, per day for VIP access.

Guests who purchase a VIP ticket will enjoy one hour early admission to the Grand Tasting Village, where they will find extra seating for relaxation and mingling while sipping and savoring Moët & Chandon bubbly in the VIP Chalet.

In today's day and age, the term “Chain Restaurant” often gets a few noses turned up at even the mention of the words. I say that because as a food blogger, I can tell you...just because a restaurant has more than one location or several for that matter, does not mean that they can not stand above the competition. 

Fleming’s was founded in 1998 by restaurateurs Paul Fleming and Bill Allen in Newport Beach, California. The vision was to create a unique steakhouse experience with an emphasis on generous hospitality, an inviting atmosphere and the very finest aged USDA Prime beef. We were greeted by the chef with a wonderful appetizer of gulf shrimp and cheese grits.

My dining companion and I decide to split the Spring Tomato Bisque with artisanal garlic croutons and parmesan frico. The soup was part of a “Taste Of The Season” menu and was delicious.

Once I saw the Genuine Kona crusted Prime Rib Eye, I had to order it. At 16 ounces, it was more than I could eat in one sitting, but a steak this flavorful deserves two separate days to eat it. The Rib Eye itself was cooked to perfection at my requested medium and the Kona rub was magical.

My dining companion chose the Filet “Oscar” paired with a jumbo lump blue crab cake and béarnaise sauce, as featured on the Taste Of The Season menu. The filet was like butter and just melted in your mouth, and the crab cake was excellent as well.

We chose the Warm Apple Crisp with cinnamon crème for our dessert. It was a lovely treat for two to share.

Any time is a good time to stop into your local Fleming’s for some wonderful prime cuts of steak. However, they usually offer seasonal specials throughout the year on a “Taste Of The Season menu with special food pairings and custom cocktails.

Running until June 18th is the Rare & Bold: A Pairing Experience –
Diners can experience the perfect pairing of steak and wine and discover the distinct flavors between steak cuts and aging processes when precisely paired with different types of wines. This four-course, culinary experience will feature Fleming’s classics and thoughtful wine pairings starting at $95 per person, two person minimum.

If you have a case of the Mondays… and who doesn't ? Fleming’s has something that will turn your frown upside down with Prime Monday’s. 
Guests can enjoy a three course meal with their choice of the Craftsman Ribeye, Pork Chop or Sea Bass accompanied by Truffle Mash and Spicy Thai Green Beans. Clearwater Beach Uncorked is a two day food, wine and craft beer festival that draws thousands of attendees to Florida's award winning Clearwater Beach. Anthony LogerfoPublix Aprons Cooking School 
Anthony LoGerfo joined Aprons Cooking School in October 2010. Coming from an Italian background, food and family have always been a big part of his life. In 1991, Anthony graduated from the French Culinary studying under the world-renowned Master Chef, Jaques Pepin, where he learned the most important lessons about traditional French cuisine. After three short years with Publix, Anthony has been promoted to Resident Chef. Still sharing his passion for food, culinary knowledge, and expertise so that you too can learn to have fun in the kitchen.
 
Emily EllynFood Network Star and Cutthroat Kitchen Winner

Emily Ellyn is best known as the Retro Rad Chef from Food Network; appearing on Food Network Star,Cupcake Wars and most recently as the winner of Cutthroat Kitchen.She’s also a culinary educator and food writer, who writes for edible and BAR magazines and lectures at the University of Central Florida. Chef DiPaolo and his team, have full research and development responsibility for some of America’s most loved grocery brands including Duncan Hines cake mixes and frostings, Comstock-Wilderness fruit and pie fillings,Vlasic pickles and Mrs. Butterworth’s and Log Cabin syrups. Chef DiPaolo holds a Baking and Pastry Degree from the Culinary Institute of America and is a member of the Retail Bakers Association.



Ticket Pricing & Inclusions – Tickets are priced at $65 per person, per day for general admission and $95 per person, per day for VIP.
 
New VIP Experiences – Guests who purchase a VIP ticket will enjoy a new VIP Beach Brunch taking place from noon to 1 p.m. each day before the main event opens its doors. Del Frisco's Double Eagle Steakhouse

Back in August, I shared with you the news of the all new Del Frisco’s Double Eagle Steak House that opened up on I-Drive in Orlando, you can see more of it Here if you need a refresher.

Although I did sample all kinds of wonderful appetizers, I didn't really get to sample the good stuff...steak. So I was delighted to return for another preview of what turned out to be a meat lover's dream come true.

As I mentioned in my first blog post, the Del Frisco’s brand was born more than 20 years ago, and embodies the rich tradition of the classic American steakhouse, with impeccable chef-driven cuisine, an extensive award-winning wine list and unparalleled hospitality.

Del Frisco’s Double Eagle Steak House features a sizable, diverse wine list of more than 1,200 labels, to include a number of notable verticals from both old and new world producers. With two floors that include two bars, four private dining rooms and a picturesque patio, Del Frisco’s Orlando boasts over 400 seats. I'm sure you appreciate that information, but lets get right to all this wonderful food.


To help wash down all of the flavors, we were treated to Del Frisco’s Private Reserve Cabernet Sauvignon and a Sonoma Cutrer Russian River Ranch Chardonnay. The cocktail of the evening was The VIP, which is Del Frisco’s signature cocktail made with clementine vodka infused in a full pineapple for 14 days.

The Shellfish Plateau features chilled Alaskan king crab legs, iced jumbo shrimp, fresh oysters on the half shell, chilled crab claws & traditional garnishes.

The Petite Crab Cakes were nice chunks of crab meat and Cajun lobster sauce sitting on top of a delicious basil brioche.

A wonderful twist on Pork Belly was the Thick Cut Bacon Au Poivre with Bourbon Molasses Glaze. This was loaded with flavor and had plenty of savory with an equal amount of sweet.

I love a good lamb cooked properly, and the the Lamb Lollipop’s with a pomegranate mint glaze were pretty amazing.

The Tuna Tartare featured strikingly fresh tuna, crisp wonton and wasabi cream with micro cilantro.

Filet Mignon may be a common steak to order, but rest assured, Del Frisco’s will make sure your filet is extraordinary.

The Prime Strip Steak had a wonderful seasoning on it and melted in your mouth.

Ribeye is one of my favorites, next to a good strip steak, and the Prime Rib Eye Steak I tasted at Del Frisco’s was heavenly.

Some of the evenings desserts included a Lemon Cake with lemon buttercream icing and lemon glaze, Chocolate Souffle Cake with a warm molten center chocolate cake, vanilla ice cream, and raspberry sauce and a Butter Cake with butter pecan ice cream, fresh whipped cream & caramel sauce. All of which were delicious.

Del Frisco’s Double Eagle Steakhouse is open for Dinner from Monday through Saturday from 4:00 pm to 11:00 pm and Sunday from 4:00 pm to 10:00 pm.
Lunch is served Monday to Friday from 11:00 am to 4:00 pm.

Some of you may remember the former Peabody Hotel and the famous marching ducks. One of the restaurants inside of this establishment was an Italian restaurant by the name of Napa. 

Gone are the days of the ducks, and the Peabody itself for that matter, as Hyatt purchased the property a few years ago and turned it into The Hyatt Grand Regency. Napa stuck around for a while after that, but now the restaurant has transitioned into Urban Tide, which offers diners a modern twist on local Florida seafood favorites.

The concept of Urban Tide is to accentuate the chic coastal cuisine and the freshest seafood from Florida’s bountiful coast. Seasonal favorites are celebrated and elevated with bold flavors served in a stylish setting. With dark wood furnishings and modern decor, Urban Tide offers diners a quiet, understated elegance highlighted by picturesque views of the grotto pool.

Chef Jared Gross brings Florida’s local seafood flavors to life with his modern twist on coastal favorites. Highlights from the new menu include a selection of starters such as a ceviche with citrus marinated Florida sea bass and serrano spiked rock shrimp and grouper cheeks with shishito peppers. Seafood selections include gulf grouper, sea bass and whole red snapper, which can be prepared blackened, grilled, or sauteed. All seafood dishes are served with a trio of house made sauces. Other favorites include grilled domestic lamb rack with tomato farro risotto and baby zucchini as well as a classic Cioppino.

Whether dining for lunch or dinner, guests will find a classic or current take on favorite handcrafted cocktails, or they may select from a distinctive collection of craft beers and fine wines. When it comes to wines and cocktails, you can rest assured that Hyatt Regency has put just as much thought into libations as they have the food. The people at Hyatt have teamed up with a few very distinctive wine makers from various regions across the globe, to make sure they are bringing their guests the very best selection and pairings possible.

The restaurants at the Hyatt Regency will feature various “Chef’s Table” events throughout the year, where the the head chef and a selected winemaker or a selected beer brewer will collaborate to create an evening of food and fine wine, or food and fine beer pairings at Urban Tide and Fiorenzo “Chef’s Table” dinner events. Fiorenzo is the Italian steakhouse on the property that combines the charm of an authentic Italian restaurant with a refined selection of steaks, chops and seafood.

I recently had the opportunity to attend a “Chefs Table” event and enjoy an extraordinary evening of delicious foods from Chef Jared Gross and some great wine from Argentina with Juan Pablo Gonzalez, who is a representative for Pascual Toso wines.

When in the mid 1880s Pascual Toso set out towards Argentina from his home town, Canale D’Alba, in Piamonte, Italy, he could not have imagined that he would become the founder of a winery, which is today one of the oldest and most prestigious wineries in Argentina.

The Toso brand benefits of a real success not just in the national market, but also worldwide. The Bodega has gained years of experience in exporting to international markets, and the wines are available in more than 30 markets including the United Kingdom, USA, Japan, Europe, Russia, Korea, Canada and Latin America.

The most important part of Toso wines is the passion for the wines and the quality they try to achieve. Since 1890, Bodegas y Viñedos Pascual Toso has become one of the most exciting and promising Argentine wineries and remains faithful to its principles: Tradition, Authenticity, Innovation.


Our evening was started with a reception that featured a Florida Grouper Ceviche with serrano peppers and a calamari ring, as well as a glass or two of Toso Brut Sparkling Chardonnay. I was impressed with the ceviche and the spiciness of it, but I was falling in love with the Champagne like sparkling chardonnay.
 
Seafood is certainly an international food, but biscuits are a pretty southern thing, so why not pair them together with Red Spruce Farms Cheddar Biscuits served with a burnt onion jam and a pimento spread.


The Diver Scallop with brown butter and lobster risotto was our first course, and it was a delectable dish made with fennel, chives and blood orange. 


That delectable diver scallop came paired with a soft and very aromatic Toso Chardonnay from 2012. It has an extremely pleasant aroma and was quite enjoyable.


The Linguica Sausage Croquettes were a rather interesting second course, and they were quite tasty. They are made with braised rabbit gribeche, which is a mayonnaise style cold egg sauce, and walnut rye crumbs. This was served along with a wonderful Toso Malbec Reserve 2012. The Malbec Reserve is one of the top wines from Toso because it is easy on the palate and is a serious Malbec at a good value.


Our third course was a Bison Filet with Wild Mushroom Cannelloni in a smoked tomato butter sauce. This was a rather heavy portion of food, but delicious nonetheless. Although the food was good, It took a backseat to the Toso Pedregal 2010 that was served up alongside.


The Toso Pedregal 2010 is made with 70% Malbec and 30% Cabernet Sauvignon. The wine is aged for 18 months in oak with the Cabernet Sauvignon being aged in American oak barrels, and the Malbec being aged in French oak. After that, the wine is aged 10 months in bottles before release. All of this makes for a mesmerizing flavor of beautiful black fruit with blackberry, boysenberry and accents of licorice. One sip, and you will see why the Pedregal is of notable pedigree and a very special wine indeed.


Our fourth and final course of the evening was a Chocolate Hazelnut Tart with burnt honey ice cream and spring berries. A very elegant dessert with the outstanding flavor of the burnt honey ice cream. Our dessert came with Toso Altah Syrah 2010. This is a wine with an intense nose of dark fruit, blackberry, blackcurrant, dark chocolate, vanilla and oak spices, and it was a perfect wine to end the evening on.

The next Chef’s Table event will be held at Fiorenzo Italian Steakhouse on Saturday May 23rd. Chef de Cuisine Will Walters will be heading up his first Chef’s Table dinner featuring steakhouse favorites served with ice cold selections from New Belgium Brewing. Also on the calendar for May is Summer Sensation, Live on the Garden Terrace. Guest will get an opportunity to feel the sensation as country singer-songwriter and national recording artist Josh Thompson takes the stage with JT Hodges and Nikki Lane to kick off summer in unforgettable fashion on Sunday, May 24. Live on the Garden Terrace, the hotels first ever concert celebration pairs the hottest summer music sensations with cool breezes, ice cold brews and handcrafted cocktails.
