The latest nutrient-rich restaurant concept to make a splash in the fast casual dining scene, is expanding to Central Florida and bringing their delicious foods and job opportunities to Lake Nona, Winter Park, and UCF.

Created by Chris Gannon and his father Tim Gannon, co-founder of Outback Steakhouse, Bolay with its "so fresh, so bold" motto invites food lovers of all ages to build and customize their own nutrient rich bols packed with superfoods and savory proteins. 

Bolay is thrilled to be expanding into the hospitality heart of the state with the opening of new locations in Lake Nona in early September, Winter Park in February of 2019, and UCF in Q2 2019.

“We absolutely knew we wanted to be in central Florida near Orlando,” says Bolay CEO, Chris Gannon. “Opening several stores in this area is an awesome challenge because of all the great places to visit and eat, but that’s the Bolay Way. Angela Gutierrez will be Operating Partner for the Lake Nona store located at 12711 Narcoossee Road, Suite 120. She feels that this is the perfect next move for the booming brand. “The demographic here in central Florida aligns perfectly with our brand - active, young-minded and health conscious. Bolay is a brand that really believes in building community and we know it’s going to fit right in to Lake Nona,” says Gutierrez.

Bolay offers a gluten-free, build-your-own-bowl menu along with delicious cold-pressed juices. Superfoods like kale, quinoa, and spinach are staples, as are top-quality protein options, including Steak Au Jus and Ahi tuna. The brand collaborates with some of the best chefs in the country to bring nutrient rich bold flavors to life.

Lake Nona’s premier waterfront restaurant with chef driven, New American fare, has just launched a new menu featuring 22 additions. The changes are designed to showcase the best in fresh and upscale cuisine with an approachable feel.

Led by Executive Chef Bryan Thoman, the Canvas restaurant menu features new American cuisine that is influenced by Florida’s Southern and Latin American roots with a focus on seasonal and regional produce as well as an abundance of fresh, Florida seafood. The chef driven menu is filled with shareable appetizers, creative salads and sandwiches, hearty entrees, and wood grilled pizzas and flatbreads.


Chef Bryan Thoman’s brand new dish selection reflects an array of reinvigorated plates which cater to the diverse palate of each guest. Items like Habanero Glazed Chicken Wings, Black & Blue Burger, Seared Scottish Salmon Fillet, and others are perfect entrees for summer.

Many of the dish ingredients present a library of herbs, tomatoes, and peppers grown in the restaurant’s outdoor garden, highlighted in plates like the Heirloom Tomato Panzanella Salad and Vegetarian Bianco Flatbread.

Every detail of Canvas has been thoughtfully designed and planned to create a welcoming space for guests. The restaurant’s exhibition style kitchen opens to the main dining room while floor-to-ceiling windows provide picturesque waterfront views.


The Summer Vacation cocktail at canvas, truly tastes like one. This is made with passion fruit, lemon, pineapple, Solerno blood orange liqueur and my all time favorite rum, Flor de Cana.

This Strawberry Rhubarb Mule is certainly not your average mule. The drink contains mint, housemade strawberry-rhubarb jam, Fever Tree ginger beer & Reyka vodka. Reyka Vodka is the only vodka in the world made with a Carter-Head still, and the only vodka served in a tiny one… really love the mini still for a mule mug.

Jumbo Lump Crab Cake features arugula, pickled fennel, and jazzy Louisiana remoulade for a nice flavor with a little bite on the end.

Slow Roasted Pork Belly at Canvas is always a great choice. Made with soy-key lime marinade, charred celery, pickled fennel, mint and a mango jalapeno sauce, this pork belly is filled with great flavors.

Octopus is not for everybody, but if it’s cooked right, you might become a fan, and this Sherry Braised Octopus is a great way to challenge your taste buds. Cooked in a Cast iron skillet with chorizo, crispy fingerling potatoes, wilted arugula and caper vinaigrette, this was some of the best octopus I've had.

The Heirloom Tomato Panzanella is a great new addition for summertime. This salad contains Bermuda onions, basil, mint, garlic roasted ciabatta, arugula and a red wine vinaigrette.

Don't take your chances burning good meat on your grill… head over to Canvas and order this Grilled Prime New York Strip Steak with goat cheese potato au gratin, wilted baby spinach and some wonderful garlic butter, you won't regret it.

When you have your own garden and are as creative as Chef Thoman, you don't make a boring old cheesecake, you make a Pistachio, Strawberry and Rhubarb Cheesecake with goat cheese, and a salted caramel brittle. It was ridiculously good too.

The market part of Canvas is open daily for breakfast and lunch. Guests can stop in and have a meal at the market’s communal table or chose from a variety of grab and go options, gourmet coffee, and fresh-squeezed juice and smoothies. The market also has comfortable seating and nooks where patrons can enjoy food and complimentary WiFi.

The 278 seat Restaurant part of Canvas is open Monday through Thursday from 5:00 pm to 10:00 pm, Friday and Saturday from 5:00 pm to 11:00 pm and Sunday from 5:00 pm to 9:00 pm.

The Bar Opens daily at 3:00 pm, and the market is open from 9:00 am to 7:00 pm.

Lake Nona Town Center’s first restaurant is scheduled to open September 21st.

Tavistock Restaurant Collection has announced that Chroma Modern Bar + Kitchen, the anticipated Modern-American concept located in Lake Nona Town Center, will open to the neighborhood on Wednesday, September 21st.

Boasting a contemporary and communal dining atmosphere, Chroma’s extensive small plates menu takes a “something for everyone” approach with dishes inspired by a global spice palate. Scratch dishes are designed to savor and satisfy. Chroma’s menu is intentional in every sense, with an extensive vegetable selection to seafood and meat dishes. A fresh focus fuels moderate menu changes to reflect what is local and in abundance.

The restaurant will offer eclectic small plates and is overseen by Executive Chef Jason Bergeron, who competed earlier this year on Food Network’s “Chopped Grill Masters.”

At the heart of Chroma’s 256-seat restaurant is an oversized bar, where locals can belly up, unwind and enjoy wines on tap, local draft beers and seven Tavistock private-label wines.

A selection of nine housemade cocktails created by Assistant General Manager Megan Harris include a signature Chroma Paloma ($10) with Stoli Ohranj, grapefruit juice, mint, and Coppertail Brewing Co. Wheat Stroke, to exciting twists on the classics like a Seasonal Sangria ($9), a Pineapple Ginger Caipirinha, ($11), Adam’s Got Mojo ($10) and an Ancho Daiquiri ($11).

The menu ranges from Quail Egg Croquettes ($9), Roasted Edamame ($7), Wagyu Skirt Steak ($14), and Skillet-Roasted Clams ($11) to Guava and Goat Cheese Flatbread ($12). Three “For The Table” offerings are larger in size, served family-style and include a Crispy Pork Loin ($35), Flame Grilled Ribeye ($53) and Jambalaya ($35). 

Chroma’s open layout includes a main dining area with cozy banquette seating, an outdoor lounge and covered patio and a solarium complete with inspiring views of Lake Nona Town Center’s community artwork. All dining options are available for private or semi-private group dining.

From Summer Harvest to Magical Dining at Canvas

Canvas is the brand new restaurant and market located at the Laureate Park Village Center in the heart of Lake Nona. If you recall back in march, Tastes Of Orlando got a pretty good taste of Canvas and we really enjoyed the place. If you missed it, you can see the full review Here.

The chef driven menu is filled with shareable appetizers, creative salads and sandwiches, hearty entrees, and wood grilled pizzas and flatbreads.

Canvas is always striving to add creativity and variety to their menu. Sometimes this might be done by featuring seasonal ingredients in dishes, or by coming up with all new entrees to feature for a short time. 

Recently I got to sample the two course summer menu that featured items not on the regular menu. Inspired by executive chef Bryan Thoman’s favorite summertime dishes and fused with Canvas’ signature Florida inspired cuisine, this limited time menu featured a variety of seasonal favorites prepared with the season’s freshest ingredients.

That deal has since expired, but as many of you know the time for Visit Orlando’s Magical Dining Month is upon us, and Canvas has a great selection of eats for $33.00 per person. During Magical Dining Month, participating restaurants offer up a three course meal that includes an appetizer, entree and dessert for one set price.

At Canvas diners can choose between an appetizer of the Jerk Marinated Grilled Chicken Wings or a Crab and Corn Bisque.

The entree selection includes Memphis Style Hot Chicken with biscuit and house pickles, Shrimp and Pork Belly Cheddar Grits with fried okra and piquante sauce or the Oak Grilled Wahoo Roasted Kabocha with squash and mole verde.

For desserts you can't go wrong with a choice of Sticky Toffee Pudding or the seasonal Upside Down Cake with vanilla bean gelato.

The Southern Hospitality Smash is among my favorite cocktails at Canvas with Woodford Reserve bourbon, dry curacao, pineapple, basil and grapefruit bitters. The Tavstiock Reserve Chardonnay is very good as well.

These little guys were on the Summer Harvest menu, and have made it to the Magical Dining Menu as well. The Jerk Marinated Grilled Chicken Wings with mango jalapeno puree are loaded with flavor, a nice heat and best of all the meat falls right off the bone.

The Classic Deviled Eggs with Sriracha were tasty treats.

By far, the most impressive appetizer of the evening was the Watermelon Salad with buttermilk dressing, arugula, jalapenos and Cotija cheese. The sweetness combined with the heat and creamy tang of the buttermilk was just an explosion of flavor.

For my entree selection I chose the Summer Steak Frites. I'm just a sucker for steak and frites and whenever I see it on a menu, I order it. The petite tender filet medallions with house fries and au poivre sauce made with black peppercorn were delicious.

The BBQ Baby Back Ribs should be a permanent addition to the Canvas menu. They were awesome in every way. The ribs are slow cooked Carolina style and have a nice baked on glaze that was savory with a touch of sweet. The collard greens and jalapeno corn bread were as southern as it gets and were perfect pairings for these ribs.

For dessert we ordered the Seasonal Upside Down Cake, which was a pineapple upside down cake with vanilla bean gelato. It was the perfect amount of sweetness and creaminess to end our night.

Over the years the area of Lake Nona has seen some pretty rapid development, most notably of which is the development of Lake Nona Medical City. The 650 acre health and life sciences park is a landmark for Orlando and a premier location for medical care, research and education. Canvas Restaurant and Market, as it is formally named, is certainly hoping to make the area a premier dining destination as well.

Diners can opt to sit inside in cozy banquettes, enjoy a meal out on the terrace overlooking the water, or toast with handcrafted cocktails at the prominent wooden bar.


The market also features a selection of carefully curated housewares, books, jewelry, local goods and furnishings in addition to housing the new Lake Nona Information Center.


Canvas is also very serious about its cocktails and drink menu. In addition to a great beer and wine selection the cocktail selection here is top notch. On the left is The Pink Flower with Hendrick’s Gin, Cointreau, Cappelletti, Lemon Juice, Boston Bittahs Bitters. On the right is a Postal by Plane with Flor de Cana 4 yr Anejo Rum( A rum I haven't had since my visit to Roatan, Honduras).


The Smoked Fish Dip features house smoked white fish, spiced cream cheese, sour cream and Parmesan flatbread for dipping. This was a very rich and delicious fish dip that was more than enough for two people to share.


On the Smaller Plates section of the menu, you can find the Apple Bourbon Braised Short Rib with brown butter, wild mushrooms, tomato confit, house made ricotta cheese and olive oil grilled sourdough bread to put all of that wonderful short rib on.


The Southern Hospitality Smash pictured left is made with Woodford Reserve bourbon, dry curacao, pineapple, basil and grapefruit bitters. To the right is a Very Dirty Martini.


The Pan Roasted Snapper not only looked spectacular, it tasted spectacular as well. This dish is served in a soy ginger sauce with with soy ginger glazed carrots and bok choy.


There are many great selections on the menu at Canvas, but as a burger lover, I couldn't resist the Short Rib and Brisket Burger with garlic dill pickles, lettuce, tomato, aged cheddar, caramelized onions, house made thousand island dressing on a brioche bun with hand cut fries. I could go on and on about this burger, but I’ll sum it up like this...This burger has potential to be one of Orlando’s top 5 burgers.


Although the Apple Crisp may seem like a basic dessert, I can assure you this was not your grandma’s apple crisp. The one at Canvas features gala apples, red D’Anjou pears, oat-almond crumble and is topped with salted caramel ice cream. Even as full as we already were, we managed to devour this wonderful dessert.

The 278 seat restaurant is one of Orlando’s only waterfront dining destinations and is really a beautiful restaurant from top to bottom. You may not live close to Lake Nona or Medical City, but I highly recommend you make the drive over there to check Canvas Restaurant and Market out. Who knows...you may even decide to become a resident of one of Orlando’s fastest growing communities.
