Maria & Enzo's to Open Alongside Enzo's Hideaway at Disney Springs

Nick Valenti, CEO of Patina Restaurant Group (PRG), confirmed plans to open three new modern Italian restaurant and bar concepts at Disney Springs this winter.

The restaurants, which are all new concepts created by PRG, each with unique menus, will form an expansive dining complex showcasing authentic Italian food and entertainment. They will be adjacent to The Edison, the lavish “Industrial Gothic”-style destination also being developed by PRG.

“I’m delighted to announce that we will be opening a trattoria named Maria & Enzo’s, as well as Enzo’s Hideaway, a separate restaurant in what were said to be rum-running tunnels, which is destined to become a local favorite,” said Valenti. “They are inspired by the cuisines of Sicily and Rome, the Italian family, and the best of Italian modern cooking.”

The new concepts tie into the Disney Springs storyline of a restored Florida waterfront town. “Our inspiration is to bring unforgettable food and wine from Italy to Florida, with the stunning scenery you only find at Disney,” said Valenti.

Maria & Enzo’s – an Italian trattoria set in the town’s storied abandoned airline terminal from the 1930s, will now be transformed into a restaurant. The dining room is open and airy, featuring 50-foot ceilings with views of Lake Buena Vista. The restaurant interiors showcase artifacts that reference air travel of the time, with maps and historic flight paths.

The menu is inspired by Sicily, with a range of family-friendly dishes – Arancini di Carne (rice balls stuffed with meat), Melanzane Parmigiana (eggplant Parmesan) – and handmade pastas – Busiate con Granchio (spiral pasta with crab), ‘Ncasciata al Forno (Sicilian baked pasta) – served tableside. Other highlights include fresh fish, richly flavored steaks and chops.


Enzo’s Hideaway is a speakeasy inspired by Roman aperitivo bars, located in the storied rum-runner tunnels that adjoin Maria & Enzo’s.

Building off of Florida’s true history of rum running, Enzo’s Hideaway will pour Prohibition-era cocktails at its Tunnel Bar and serve a casual menu of hearty Roman dishes, such as the city’s legendary Bucatini alla Carbonara (hollow spaghetti with creamy egg and pancetta sauce) and Tonnarelli Cacio e Pepe (square-cut spaghetti with pecorino and black pepper).


Pizza Ponte will be a fast-casual concept and the perfect place for a quick bite serving pastries, pizza, Italian sandwiches, and espresso. Pastry specialties include Bomboloni (Italian doughnuts) Sfoglia di Riso (pastry with rice cream) and Tiramisu. Savory items include signature Triangolo (stuffed pizza bread) sandwiches, Porchetta (roast pork) and Pizza al Taglio, Sicilian-style pizza by the slice.

New Menu Items and A Magical Dining Preview at American Kitchen

American Kitchen Bar & Grill located inside B Resort & Spa in Disney Springs, hosted an event recently to showcase the Summer Menu as well as a sneak peek at the Magical Dining dishes created by the restaurant’s new Chef, Venoy Rogers.


Chef Venoy is a San Diego native who’s spent time at the W Hotel in his hometown, and also has spent time in Miami at Essensia at the Palms hotel, as well as with the B resorts brands in Miami. His approach to cooking is a new American fusion style that is still organic and fresh.

At American Kitchen, they follow a farm to table concept, which is an immediate focus from the moment you step through the door and are greeted with the big red living garden truck. They source local and sustainable products whenever possible, and use as much locally sourced ingredients from Florida farms as possible, which is great for Chef Venoy.

He is used to year round produce, and understands the expectations of customers looking for fine dining options that are are organic and locally sourced. Chef Venoy has become somewhat of a specialist in finding the freshest and most simple of ingredients that also deliver a wow factor.

Just like America, the menu here is a melting pot of multiple influences and techniques that feature a variety of traditional American dishes along with a “Small Bites” section for starters that features items like Miso Pork Buns, Korean Glazed Pork Ribs and Tempura Avocado.

The “Provisions” portion of the menu is where you can find entrees like the Free Range Chicken with Beer Carbonara, Cookhouse Meatballs and a 29 day dry aged Ribeye as well as market fish selections. The “Hand Helds” part of the menu gets off to a great start with The Local Wagyu Beef Burger that is topped with Florida Berkshire pork belly, homemade pickles, avocado, tomato-ricotta spread and blistered sweet pepper. 

Inside American Kitchen, there is plenty of space and a variety of seating options. You can dine at communal tables or in an intimate booth with friends and family and take your taste buds down “Gin Lane” with American Kitchen’s revival on classic cocktails with a modern twist.

Signature Florida Corn Soup is a new addition to the menu in the “From The Garden” section that features charred corn, roasted poblano and cilantro.

Tempura Avocado is also new to the menu and is made with a tempura battered avocado that is topped with tomato chipotle jam and rests on a dollop of cilantro lime creme fraiche.

Korean Glazed Pork Ribs are cooked in a sweet soy glaze and are served with Chinese carrot cabbage slaw. The Tempura Avocado, Whole Leaf Caesar, and these delicious Korean style ribs are available as an appetizer selection on American Kitchen’s menu for Magical Dining Month.

Chef Venoy and American Kitchen have a few items on the menu if you are a vegetarian, and the cool thing is, they even made it part of the Magical Dining menu. This Summer Squash & Sweet Pea Vegetable Rigati is a great option with zucchini purée, heirloom tomatoes, toasted pine nuts & shaved parmesan. This dish showcases Chef Venoy’s love for using fresh and organic ingredients to create simple but elegant tasting entrees.

Local Free Range Chicken & Beer Carbonara is quite an exciting pasta creation from Chef Venoy. It features stout beer- Parmesan sauce, house made bacon, sweet grape tomatoes, peas, cured organic egg yolk. Master Sommelier George Miliotes will bring his renowned wine expertise to Disney Springs at Walt Disney World Resort when his new venture, Wine Bar George, opens in early 2018. 

Wine Bar George will be the only Master Sommelier-led wine bar in Florida.
Miliotes is widely regarded as one of the restaurant industry’s foremost wine experts with accolades and awards from national publications including Wine Spectator. 

Miliotes is no stranger to Walt Disney World Resort – he was part of the opening team of California Grill at Disney’s Contemporary Resort and managed the venue from 1995 to 2002. While there, he created an award-winning wine list and one of the first 100 wines by the glass lists in the country.

Swan and Dolphin Food & Wine Classic Introduces Grand Tasting Experience

For the first time in its eight years, the Walt Disney World Swan and Dolphin Food and Wine Classic will offer a grand tasting experience led by a master sommelier.

The tasting will feature wines from the Italian regions of Barolo and Barbaresco and highlight the unique Nebbiolo grape of northern Italy.

Leading the experience will be Master Sommelier Matthew Citriglia, one of only 149 master sommeliers in the Americas. He will guide the tasting like a tour through Piedmont showcasing several rare vintages from the region. As an intimate experience, tickets will be extremely limited.


Citriglia is the director of education for Southern Glazer’s Wine and Spirits and among the longest-tenured master sommeliers in Florida.

He has served on the board of directors of the world-renowned organization since 2004. Citriglia mentors students pursuing master sommelier certification and has created training seminars to educate professionals in the food and beverage industry. He has more than 30 years of experience in the industry.

The grand tasting will join other seminar favorites returning to the event once again, including Wine Blending, Italian Wines, More than Malbec, Base to Bubbles, Beer Please, Craft Cocktails, Fine Art of Sushi and Sake, The Cheese Course, Pasta Making and back by popular demand after a several year hiatus, Riesling, So Sweet & So Dry.

The Grand Tasting with Master Sommelier Matthew Citriglia will take place on Saturday, Oct. 28 from 2:00p.m. – 3:30p.m. Tickets are $300 per person. Eleven, as you may have guessed is the restaurant located on the eleventh floor of the Reunion Grande, the resort's most luxurious one and two bedroom villas. 

The restaurant is very chic and upscale and features an outdoor rooftop lounge that offers stunning views of the skyline and the nightly fireworks display from Disney's Magic Kingdom.

I've been there a few times in the past and have always had a great experience, but it has been a few years since my last visit. A lot can change in that time, especially in the restaurant business, and this time around it was to welcome an all new Chef.

I recently had the opportunity to meet Chef De Cuisine, Jake Brenchley, at a “Meet the Chef" media dinner to indulge in this modern rooftop steakhouse with a nouvelle feel and see how Chef Jake has elevated the epicurean experience at Eleven with a 
masterfully re-crafted menu. 

The name Eleven is not just a coincidence, but a central focus of the restaurant. The space encompasses the 11th story and rooftop of the Reunion Resort’s Grande tower, and is coupled with the comforts of a modern and progressive atmosphere and accented by farm to table elements.

The menu showcases a bounty of creatively prepared fare with 11 showcased ingredients and a signature 11 spice blend, all served from an exposed kitchen. 

The menu at Eleven is full of handcrafted cocktails and steakhouse favorites that accentuate prime cuts of beef with rubs, sauces, and other enhancements available to add to your selection. This is certainly a modern steakhouse with a new cuisine feel.

The ambiance and decor here is pretty hard to match, and you cant beat the location. The open air veranda and nightly fireworks accent the sights and sounds of the open kitchen. 


Although there is plenty of space to dine inside and outside at Eleven, the dynamic wine list and signature cocktail menu along with expanded by the glass selections can be enjoyed at the bar as well.


All good meals start with good bread, and the Parker House rolls served in a cast iron skillet with rosemary lavender butter are a great way to whet your appetite in anticipation for your steak. These are highly addictive, so be sure to leave some room for the rest of your meal.


Wagyu Beef Carpaccio is a great appetizer to share at the table, or eat it all by yourself. This is served with Baby Fennel, Foie Grois Cream and Gooseberry.

If you are not in the mood for a steak, Eleven also features Salmon, Sea Bass, and this wonderful roasted Halibut with lobster, almond milk, English peas, ramp pesto, and preserved lemon. This was served with Pinot Grigio.


The 1855 Ribeye is dry aged 21 days and was cooked to perfection. This cut of meat was tender, juicy and succulent and was highlighted by the flavor blend of the 11 spice blend of green peppercorns, pink peppercorns, coriander, cardamom, cinnamon, garlic powder, chili powder, star anise, fennel seed, sumac and smoked paprika.


The steak was accompanied by Creamed Corn with grilled scallions and bacon fat. Other accompaniments we enjoyed were the Roasted Potato Gratin with yukon and sweet potatoes and the Pancetta Roasted Brussel Sprouts.


The dessert portion of the evening was something simple with a twist. The Preserved Raspberry Crumble with whipped brie gelato, rose petal sugar and mint spun sugar may appear to be something your grandmother would whip up, but the complexity of ingredients made this an interesting ending to our night.


Reunion resort is a spectacular place to visit, even if it's just for dinner. As mentioned earlier, at around 9:00 pm or so, if you are at Eleven restaurant, you do not want to miss the wonderful fireworks display from the neighboring Magic Kingdom.

Reunion Resort features 360 resort accommodations including luxury condominiums, private villas and vacation homes surrounded by 2,300 acres of lush landscape as well as a nature preserve. It is the only location in the United States with golf courses designed by the golf greats Jack Nicklaus, Arnold Palmer and Tom Watson.

The resort also features elegantly appointed meeting space, a full service boutique spa, multiple pools, slides, water playgrounds and a 1,000 foot lazy river… and oh by the way, there is even a rooftop pool outside on the 11th floor, just outside of the restaurant.

Hilton Orlando Buena Vista Palace is a 1,014 room Orlando oasis that recently completed a property-wide, multi million dollar renovation, with further plans of 80 million dollars expected to be spent to finalize the complete transformation.

The hotel has unveiled a series of upscale refurbishments including new restaurants, market places, recreation areas and of course all of the rooms got a complete makeover too.

The highlights of this renovation include all new guest room and lobby design, new lobby bar and outside terrace. The restaurant and market additions include Sunnies, home to a selection of local craft beers and seasonal fares, a new poolside restaurant, Shades, a new alphabet-designed restaurant that is designed to be a modern print shop called Letterpress, and a grab-and-go market and retro candy bar called Citrus 28.

No resort is complete without great family oriented recreational activities, especially in Florida. The new expansive recreation area at Hilton Lake Buena Vista includes a Float Lagoon lazy river, adult lap pool and cabanas with a new event lawn and plenty of kid’s programming.

Other resort gems include the Sunday Disney Character Brunch, retro-themed candy shop, stargazing lessons with glow in the dark mocktails, and rooms where kids can watch firework shows from their windows. Groups can book a cocktail reception with views of firework shows over Disney theme parks at 20Seven, which is the highest vantage point in Disney.

Citrus 28 is the place for those moments when you need to grab a quick meal. The gourmet market and cafe features Starbucks coffee, freshly prepared light meals, gourmet bites and local favorites prepared daily and an old fashioned candy store. Guests can take advantage of complimentary Wi-Fi while enjoying the casual seating area.

Letterpress has an impressive view. This is the place to enjoy the eclectic feel of a modern printing shop while enjoying classic American fare. The newest restaurant features seasonal favorites and cooked to order omelets for breakfast. Lunch and dinner menus feature delightfully plated meals with locally sourced ingredients. While you dine, you can enjoy the gorgeous views of Blake Lake, the new float lagoon and event lawn.

Shades is the perfect spot to pull up a chair and enjoy delicious poolside drinks and cuisine. Shades serves fresh American fare, including the quintessential burger and fries, flatbreads, wraps and refreshing cocktails while lounging poolside in the Florida sunshine.

The Cobb salad at Shades features chopped greens, grilled tomatoes, avocado wedges, griddled egg ribbons, lemon dressed rotisserie chicken, cave aged blue cheese & a charred lemon and Italian dressing.

Local brewery, Central 28 Beer Company, located in Debary, FL, can be found at Shades as well.

The Coastal Fish Tacos at Shades are flour tortilla with fresh grilled local fish, house ranchero, avocado, shredded lettuce, & topped with a fresh cilantro crema.

For dessert, Shades offers a cookie ice cream sandwich made with vanilla ice cream sandwiched between two chocolate chip cookies. The cookies are made in house & can also be picked up at Citrus 28 in the hotel.

Sean Riebau is the director of Food & Beverage and his focus is on a regional food and farm to table menu. Shades has approximately 100 dining seats with 30 seats at the bar.

The newly redone Planet Hollywood Observatory has officially opened its doors, and it's pretty amazing.

Centrally located overlooking the heart of Disney Springs with a newly expanded outdoor terrace and bar, a new menu and a dazzling array of lighting and design elements, Planet Hollywood Observatory has the “wow” factor for sure.

Repeatedly at the forefront of industry trends, Robert Earl, the entrepreneur, restaurateur and star of the Cooking Channel’s “Robert Earl’s Be My Guest,” spearheaded the redo for the Orlando flagship location, and he has really outdone himself with this one.

Within the sophisticated entertainment emporium, patrons of all ages are invited to “Dine Amongst the Stars” through distinctive indoor and outdoor bar and lounge options, an imaginative new merchandise line, and a host of all star celebrity collaborations.

Designed by Elkus Manfredi Architects, each floor was created to provide a different experience so guests can return again and again, discovering a new adventure each time. Walls and glass displays throughout the restaurant are adorned with imagery as well as a curated collection of memorabilia, along with a state-of-the-art 4,500 square foot video wall that utilizes the latest in 3-D technology.

Chef, restaurateur and television personality Guy Fieri has introduced a few flavor packed burgers and sandwiches to the menu as part of the larger menu offerings for the transformed Orlando flagship location. New dining options are aimed to highlight Planet Hollywood’s timeless classics and introduce Fieri’s updated creations.

“Guy Fieri has created an impressive culinary empire and has built an incredible TV following with several food themed shows, so it was a no brainer to invite him to create a special menu for Planet Hollywood Observatory. This partnership only furthers our commitment to refresh our guest experience while continuing to offer freshly prepared, pleasing dishes,” said Planet Hollywood International Founder and Chairman Robert Earl.



While the exterior is reminiscent of a turn of the century observatory with a modern design aesthetic, the interior’s refurbished upholstery, spherical planet shaped lighting fixtures and stylish finishing create a welcoming atmosphere for fans to celebrate a new generation of superstar entertainers.


The updated beverage program features a variety of milkshakes, smoothies, wines, bottled and draft beers, as well as cocktails served in specialty glassware. Pictured left is the Observatory made with Stoli vodka, peach tea and prosecco. On the right is the Stargazer made with blueberry vodka and lemonade.

The High Roller Appetizer Platter is quite the spectacle when it arrives at your table served in a Ferris wheel. This features Chicken crunch tenders breaded with Cap'n Crunch and corn flakes, Texas Tostadas, buffalo wings, five cheese dip and Peri-Peri shrimp.


The Bacon Mac-N-Cheese burger is made with applewood smoked bacon, six cheese mac-n-cheese, crispy onion straws and is finished up with Guy’s famous Donkey sauce. All burgers and sandwiches are served with triple fries, which is a variety of three different types of seasoned French fries. This is the signature burger here, and it was pretty messy, but pretty darn tasty.


The St. Louis style BBQ ribs are smoked in house and smothered with BBQ sauce served with triple fries served on a miniature picnic table. The rib meat literally fell off the bone and had a great flavor.


Of course the desserts here are just as exciting and entertaining as the rest of the food and the observatory itself. This Cosmic Cotton Candy milkshake features cotton candy flavored ice cream, rainbow sprinkles, white chocolate covered pretzels, cotton candy, and a lollipop. 

Other shakes like this are featured as well like the Strawberry Big Bang and the Chocolate Comet that are just as over the top and delicious as this one. They also offer a Gelato and ice cream plate, chocolate meltdown, brownie sundae, and Star Jars that are like cakes or puddings layered up in jars.


Planet Hollywood Observatory is open from Sunday to Thursday from 11:00am until 12:00am, while Friday and Saturday the restaurant portion is open until 1:00am.

The bar portion is open from Sunday to Thursday from 11:00am to 1:00am and Friday and Saturday, the bar stays open until 2:00am.

If you recall back in 2014, I told you about American Q, which was a rodízio-style concept offering a modern take on classic barbecue. Just picture the ultimate Americana version of of Texas de Brazil or Fogo De Chao, and you get the picture. I loved American Q very much and thought it had potential, but alas it was not to be.

In its place American Kitchen Bar & Grill has opened up with a more refined concept that is a is a take on traditional American dishes made with fresh, locally sourced ingredients from local Florida farms.

At American Kitchen, you can dine at communal tables or in an intimate booth with friends and family and take your taste buds down “Gin Lane” with American Kitchen’s revival on classic cocktails with a modern twist.

The menu features a variety of selections such as “For the Table” or “Tidbits” from the Pantry. American Q was an all you can eat rodizio style concept with a few menu selections, but mostly in the fashion of Texas de Brazil with a never ending serving of meats with a gigantic salad bar. American Kitchen is menu options only, with a very focused menu that has something for everyone.

At American Kitchen you can start with a family style Low Country Boil or the Signature Smoke Platter followed up with Pretzel Dusted Fried Okra or Brown Butter Kitchen Fries. The old Red truck at American Q was the spot for the salad bar, but American Kitchen has kept it along with much of the decor and turned it into a living garden where they harvest all of the greens and herbs used to create signature dishes. American Kitchen Bar & Grill proudly takes part in the farm to table movement with food inspired by regional American cuisine. We found the menu to be dynamic with good offerings and a good hand crafted cocktail selection that should make it worthy for you to visit.


Although the salad bar has been removed from the truck, American Kitchen still uses the flatbread part to grow lettuce and herbs in a vertical grower. The truck is really cool, and I’m glad they kept it and put it to good use.

The Makers Thick Cut Bacon with watermelon, jalapeno jam and opal basil was savory, sweet and refreshing all at once. The jalapeno jam was very mild in in heat.

The Wicked Collins, pictured left, is a twist on the Tom Collins cocktail made from gin, lemon juice, sugar, and carbonated water..but with jalapenos for a kick. The Old Fashioned is available as the original style or this one on the right with muddled berries. Both were tasty cocktails.

Found on the Small Bites section of the menu, the Anson Mills Grit Cake is topped with pork confit, smoked cheddar and apple marmalade. We really enjoyed the saltiness of the pork and smoked cheddar combined with the sugariness of the marmalade and the grit cake texture.

This was simply presented to us as the “Chef’s Special” It was a seafood pasta dish with mussels, clams, rock shrimp and the chef's secret sauce. I'm not usually a fan of seafood pasta dishes like this, but whatever the chef’s secret sauce is, it made this dish wonderful. I did ask the chef what the sauce was...and he refused to tell me.

The Jerk Marinated Skirt Steak was a thing of beauty. This is a skirt steak marinated for 24hrs. In a jerk marinade served with fresh green beans and a sweet potato souffle. A skirt steak can be tough to get right and American Kitchen nailed this one. Tender, buttery and a mouth full of flavor in every bite. The sweet potato souffle was pretty good too.

For dessert, our first selection was the Chocolate Bourbon Cake. This was a very rich and moist slice of cake that would satisfy a chocoholic's craving for some chocolate.

Our second dessert offering was something like a deep fried apple chimichanga. The menu calls this a Cinnamon Apple Raisin Dumpling with Vanilla Ice Cream. Just imagine fresh sliced apples, raisins and cinnamon in a flaky dough, deep fried and topped with ice cream, and you have a dessert that is sinfully delicious.
